air fried artichoke salad with cucumber, potatoes, and tzatziki

This fried artichoke salad with tzatziki is warm, cozy, and perfectly refreshing! Made with air fried artichoke heart and potatoes, cucumbers, red onion and dill. It's easy to make and so gorgeous.

ingredients

1 cup frozen artichoke hearts

2 eggs

1/2 cup bread crumbs

1/2 cup flour

1/4 cup tzatziki

1/2 cup baby potatoes, cut in half

1 tbsp olive oil

1 cup chopped cucumber

2 slices red onion

2 tbsp fresh dill

1/2 tsp sea salt

1/2 tsp black pepper


recipe

  1. crack eggs into a small mixing bowl and whisk together

  2. place bread crumbs and flour into 2 separate small mixing bowls

  3. take individual pieces of frozen artichoke hearts and dip them first into the egg wash, then into flour, then back into the egg wash, and lastly into the breadcrumbs

  4. set coated artichokes into air fryer basket and spray with olive oil

  5. place into the air fryer at 390F and cook for 12-15 mins until golden brown and crispy (flip artichokes over halfway through baking)

  6. remove fried artichoke hearts and set aside

  7. place potatoes into air fryer basket and toss with olive oil, sea salt, and black pepper to coat

  8. place into air fryer at 390F for 8-10 mins

  9. plate dish starting with a layer of tzatziki, then top with potatoes and chopped cucumber

  10. add fried artichoke hearts, red onion slices, and dill

  11. option to add flaky sea salt and micrgreens for serving, and enjoy!
