This whipped feta dressing is SO delicious. It’s made with Greek yogurt so it’s high protein, and blended with dill and lemon so it’s really refreshing!
Since I had the blender out I also made hummus, and baked these homemade whole wheat pita chips to dip with. I plated everything with banana peppers and pickled red onions for a kick. Hope you love it as much as I did! xo
ingredients
1/2 cucumber, chopped
1/2 6” whole wheat pita
1/4 tsp garlic salt
8 Trader Joe’s dill pickle falafel
6 banana pepper slices
5 thin slices of red onion
1 tbsp white balsamic vinegar
3 tbsp fresh dill
1/4 cup chickpeas
1 tbsp tahini
1 tsp olive oil
1/4 tsp sea salt
2 tsp paprika
1/4 cup feta
1 container chobani nonfat greek yogurt
juice of 1/2 lemon
1 tsp lemon zest
recipe
preheat oven to 350F
slice 1/2 pita into wedges and lay flat on a sheet pan
spray with olive oil and sprinkle with garlic salt
place into oven and bake for 20 mins (flip pita halfway through to bake on both sides)
to a small bowl add red onion sliced, white balsamic vinegar, a pinch of sea salt, and set aside to let marinade
to make the hummus, add chickpeas, tahini, pinch of sea salt, 1 tsp lemon juice, 2 tbsp water, and paprika to a blender
blend until smooth and add in a thin layer to the bottom of a plate
top with cucumbers, banana peppers, marinated red onion, and falafel
to make the feta dressing, add feta, greek yogurt, lemon juice, lemon zest, and 2 tbsp dill to a blender
blend until smooth and drizzle over salad
garnish with 1 tbsp fresh dill, add your pita chips to dip, and enjoy!
