Dinner last night was this delicious (and on sale!) wild caught halibut from Whole Foods with a chopped vegetable orzo pasta salad. This orzo will forever be my favorite summer side dish, if you’re looking for something to bring to a bbq or dinner party, or something to cook for meal prep, this is it! Try the recipe below.
ingredients
1 lb wild caught halibut
1 lemon
1 tbsp olive oil
1 cup uncooked whole wheat orzo
1/2 cucumber
8 campari tomatoes
1 red bell pepper
1 yellow bell pepper
1 small red onion, diced
1/2 cup feta
1 tbsp balsamic vinegar
salt and pepper to taste
recipe (makes 3 servings)
1. preheat oven to 400F 2. cut filet into 3 pieces, add olive oil, salt and pepper, and lay lemon slices on top
3. fold into a 12x12” sheet of parchment paper and place each on a sheet pan
4. bake in the oven for 12-15 mins
boil 4 cups of water to cook orzo
5. cook for 8-10 mins, rinse and drain water, let cool
6. dice all veggies to add to the orzo
7. add veggies and feta
8. add balsamic vinegar, and season with salt and pepper to taste
9. plate orzo pasta salad with a filet of fresh halibut
10. garnish with a few fresh parsley leaves and enjoy!
