This lemon loaf is so delicious and very low maintenance! No electric mixer needed - I just used a whisk to mix the bread batter and it came out perfect. The glaze is just powdered sugar, a little milk, and lemon juice mixed together and drizzled over the bread. It's the perfect sweet treat to have with coffee in the morning or after dinner as a light dessert.

ingredients for lemon loaf
1.5 cups AP flour
1/4 tsp baking soda
1/4 tsp salt
1 tsp baking powder
1/4 cup softened unsalted butter
1 cup organic cane sugar
3 eggs
1/4 cup olive oil
1/2 cup unsweetened oat milk
1 tsp vanilla extract
2 tbsp lemon zest
juice of 1/2 lemon
ingredients lemon glaze
1 cup powdered sugar
juice of 1 lemon
2 tbsp lemon zest
2 tbsp oat milk
recipe (makes 10 servings)
preheat oven to 350F
add AP flour, baking soda, baking powder, and salt to a medium mixing bowl and mix together
in a separate large mixing bowl add room temp butter and sugar and whisk together until combined (3-5 mins)
add eggs one at a time and continue to whisk to incorporate eggs into butter and sugar, then add olive oil, oat milk, vanilla extract, lemon zest and lemon juice
add the dry ingredients (1/4 cup at a time) from the medium mixing bowl to the large mixing bowl with wet ingredients and mix well to incorporate
pour mixture into a 9"x5" bread loaf pan lined with parchment paper
place into the oven and bake for 50-60 mins (check with a toothpick that bread is cooked through the middle)
set aside to cool while you prep the lemon glaze
add powdered sugar, lemon juice, lemon zest, and oat milk to a to a medium mixing bowl
whisk until you have a thin glaze that is easy to drizzle (add more oat milk if you need to thin or powdered sugar to thicken)
drizzle glaze over the lemon loaf, slice into 1/2" thick pieces, and enjoy!
