quinoa salad with balsamic sage dressing

Here with another easy salad! This one is dairy-free, protein-rich, and so delicious. It's perfect for meal prep as it holds up well in the fridge for a few days. Serve it warm or cold and enjoy!

ingredients for the salad

1/2 cup cooked quinoa

1/4 cup cubed roasted butternut squash

1/4 cup diced green bell pepper

1/4 cup diced red onion

1/4 cup chopped chicken (I used rotisserie chicken)

2 tbsp dried cranberries

2 tbsp chopped walnuts


ingredients for the balsamic sage dressing

1/4 cup balsamic vinegar

1 tbsp olive oil

1 tsp dijon

1 tsp minced garlic

1 tsp minced fresh sage

salt and pepper to taste

recipe

  1. preheat oven to 375F

  2. spray butternut squash with olive oil, season with salt and pepper, place flat onto a sheet pan

  3. bake in the oven for 35-40 mins until soft and crispy

  4. cook quinoa according to instructions on package

  5. while the butternut squash and quinoa cooks, make the dressing by whisking together balsamic vinegar, olive oil, dijon, minced garlic, sage, salt and pepper

  6. to a large bowl plate the quinoa, butternut squash, bell pepper, red onion, chicken, cranberries and walnuts

  7. drizzle with the balsamic sage dressing and enjoy!
