spicy winter field roast, butternut squash, and brussels sprouts with balsamic glaze

Looking for a cozy meal prep recipe? This sheet pan meal is easy, balanced, and so delicious. Just add brussels sprouts, butternut squash, and field roast to a sheet pan, bake in the oven, sprinkle with nutritional yeast and drizzle with balsamic glaze and enjoy! Option to use chicken sausage instead of field roast for protein, and to use parmesan cheese instead of nutritional yeast.

ingredients

1 cup chopped smokes apple sage field roast (or chicken apple sausage)

1.5 cups brussels sprouts, cut in half

1.5 cups butternut squash, cubed

1 tbsp olive oil

pinch of sea salt

1/2 tsp red pepper flakes

1 tsp nutritional yeast (I used Nooch sweet cayenne nutritional yeast)

1 tbsp balsamic glaze

recipe

  1. preheat oven to 375F

  2. add all chopped veggies to a sheet pan, drizzle with olive oil, and toss to coat

  3. season with salt and red pepper flakes

  4. place into the oven for 35-40 mins and toss halfway through

  5. scoop vegetables onto a plate and sprinkle with nutritional yeast

  6. add a drizzle of balsamic glaze and enjoy!
